Simple to use Cooking Instructions for the New Vertical Propane Smoker

  • Fill the wood chip box with flavoring wood chips and put this area within the smoker as instructed in the assembly section of this manual. Refer to the section that explains flavoring wood for recommended use of flavoring wood.
  • Put the water bowl inside the smoker within the lowest rack position as explained in the assembly section of this manual. Carefully fill water bowl with water or marinade as much as 1 inch below the rim. A full bowl can last for about 2-3 hours. Do not overfill or allow water to overflow in the water bowl.
  • Insert or adjust the cooking grids into the desired rack positions. For better use of the meals with tongs or spatulas, make sure the grid wires run tailgate to cab as explained in the assembly portion of this manual.
  • After you are ready to light the burner. Refer to the Lighting Procedure about the previous pages of the manual. Heat from the burner enables the wood chips to lose, causing the flavoring smoke to amass. Adjust the dampers to manage the heat.
  • Put the food about the cooking grids in a single layer with space between each piece. This enables smoke and hot moisture to circulate evenly around all of the food pieces.
  • Smoking for two to three hours in the ideal constant cooking temperature of 225° to 250° F (110° to 120° C) will get the best results. This temperatures are based on the heat indicator mounted on the leading of the smoker. For additional tender and heavily smoked meat, less temperature might be preferred. If time is critical, a higher temperature range is recommended.
  • Check water level periodically and add water if low. For best results and also to retain heat, avoid opening the door from the smoker during use. When the doorway should be opened, only open it briefly. The smoker will quickly resume cooking temperature after the door is closed.
  • Always employ a meat probe thermometer to make sure food is fully cooked before removing it in the smoker.
  • After each use, and following the smoker is cooled, carefully remove the grease pan from the bottom of the smoker, empty the grease, and clean the grease pan.
